If you have not already found this cookbook you might want to put it on your Christmas gift list: "Special Diet Solutions, Healthy cooking without wheat, gluten, dairy, eggs, yeast or refined sugar" by Carol Fenster, Ph.D. (also the author of Wheat-Free Recipes & Menus) every recipe includes nutritional data and food exchanges and the cookbook was specifically designed for people with Diabetes and Celiac Sprue Disease (among others). In addition to the recipes a wonderful Appendices has been included, full of great tips (such as "baking with Dairy Substitutes" and "Baking with Alternative Sweetners", etc.). Even friends who don't have Diabetes or Celiac Disease, but are on special diets due to allergies or other intolerances, can't imagine how they ever survived without Carol Fenster's cookbook.
