In a recent digest, someone commented about sweet rice flour:

>Ann mentioned lots of bakers said Sweet Rice Flour is a good substitute
>for better texture in GF baking. I have a box of SWF from Ener-g foods
>(that is the only ingredient)-- the problem <in my opinion>, is this:

>ONE CUP SWEET RICE FLOUR= 405 CALORIES

But all flour - wheat or gluten free - is in that range for calories.

1 cup of flour weighs approximately four ounces, which is about 400
calories of carbohydrates.

So, contrary to popular belief, I don't think that GF foods are more
calorie dense. I think that celiac folks who are having intestines that
are healing absorb more from the food.
