Do you have access to pediatric endocrinologists or pediatric gastroenterologists? I'd think they'd have a little different point of view than those that work with adults all the time. It was suggested to me that a pediatric gastro would definitely know more about celiac disease. How frustrating to have to keep taking a child back to the hospital. I hope your hospital is better than our local one about working with a celiac diet. My aunt (also a celiac) has been confronted with spaghetti, cream of wheat -- you name it -- upon entering my local hospital. Again, I'd appreciate any insights you parents might have to share, as my blood sugars have always bounced around quite a bit -- even when I was on a strict 1000 calorie diet with very little variation.
