For challah I have used both the GF Pantry french bread mix and the GF Pantry favorite sandwich bread mix. With either mix I use 3 whole eggs and replace 6 ozs. of the water with an equal amount of milk. This makes a very rich and (we think) moist bread. Brush the top with beaten egg white before baking. The dough can't be braided--at least I can't manage to braid it. For the high holidays I baked the dough in a round cake pan (regular or spring form). You don't get the traditional spiral effect, but we did have a delicious round challah (you can add raisins soaked in hot water if you want). I do not use a bread machine as my daughter won't eat the results. I just do a regular rising in the pan and bake it in a preheated oven. Good luck! I have never had non-GF challah so I don't know how it compares to the "real" thing, but it's tasty (and doesn't last long in our house!
