I see comments today about making salads for lunch. I cannot eat a
salad without suffering the next day. I do not digest the lettuce,
etc. The same is true for raw fruits such as blueberries, as well as
some cooked vegetables like peas. I have been gluten free for 6+
years, so I don't think the reaction can be related to gluten, and,
obviously, lettuce is gluten free (I'm talking about salads I make,
so I know no croutons have been near, and that the dressing is gf).
Based on others comments about eating salads, this is obviously not a
problem for all celiacs, but is it a problem for many? If so, why?
Are our small intestines permanently harmed somehow or is the problem
totally unrelated to celiac disease?
