We diabetics all have to be aware of what are called "high glycemic index"
foods, i.e., ones that make your blood glucose rise really quickly and then
drop just as fast. Guess what foods have the highest glycemic index? Rice,
potatoes -- the celiac's staff of life.

Those binge eating symptoms are probably a response to the way your body is
dumping insulin into the system to deal with the rapid gyrations in blood
glucose. Do a Web search for the phrase "glycemic index" for more
information.

If you're really having a problem with this, you might want to be checked
for undiagnosed Type II diabetes.

Incidentally, one thing that will help moderate the roller-coaster blood
glucose  process is adding fat--like butter on a baked potato!
