According to multiple studies, oats are not harmful to Celiacs as long as they are not contaminated during processing. My question is regarding the processing. How would I ever know if oats are safe? The thought of adding oatmeal to my diet is so enticing that I am tempted to just take the chance. But I know better and will not until I hear back from the group.
