Suggestion:  Try calling local butchers who make their own sausages:  most
are willing to custom-make sausages at no extra charge (unless they have to
order in special ingredients).  There are also meat grinders available which
have a sausage-making attachment - making your own is fun & easy and gives
you total control over the ingredients..
