<<Disclaimer: Verify this information before applying it to your situation.>> For all of you who are getting bored with your lunch options, I have developed a recipe for a hearty tasty soup- perfect for long winter days. Hearty Winter Squash Soup: Ingredients: 3 boxes frozen butternut squash (I use Birds Eye) 1 can gf chicken broth 1 can gf mixed vegetable soup- try one with a full assortment (I use Health Valley's Country Corn & Vegetable) 1/2 box cooked gf pasta- I use pastariso elbow pasta 1 small red onion, pureed or diced finely salt to taste I do this all in one step- after defrosting the squash squares, I put everything in a large pot and simmer on medium heat til squash fully dilutes- mix from time to time and leave on med to low burner for approx 1/2 hour. Reheats very well and if you have a microwave or hot pot at work- it's a healthy, hearty lunch alternative.
