Within the last few months, bread machines that work well for gluten-free
flours have been discussed. Red Star (the yeast company) has one that is
recommended and there are several Wellbuilt models. I have an older Wellbuilt
programable (no longer made) but I've NEVER stirred the flour mixture.
Most recipes recommend only one rise for the gluten-free flours, but I'm
generally too lazy to program it, so I push the button for white bread,
totally ignore it for 4 hours; it has a cool down process and is ready.
It is quicker of course with one rise.       Lynn
