<<Disclaimer: Verify this information before applying it to your situation.>> With respect to Ken's comment quoted below, I have been told by two GI specialists that although a celiac patient may not notice immediate effects from a tiny bit of gluten, there is reason to believe that it still affects the intestinal tract. My own GI told me that when celiac patients who are on a GF diet develop the intestinal lymphoma, it is suspected that the cancer emerges because of careless monitoring of the gluten intake and that the slightest trace can be dangerous for us. I offer this only because the discussion seems to suggest that we have a choice, but the advice I received when diagnosed strongly emphasized that a little bit does hurt.
