I adapted a regular pancake recipe for my rice-free, corn-free days and these
turned out GREAT! Hope you enjoy.
 
 
Beat together:
 
1/2 c applesauce
2 eggs (or replacer)
1/4 c oil
1/3 c liquid (I use water)
 
In a separate bowl:
 
1/2 c quinoa flour
1/2 c tapioca flour
1/2 garbanzo bean flour
1/4 t salt
2 t baking powder
1 T sugar (optional)
 
Add the liquid to the dry ingredients and mix slightly.Cook over low to
medium heat as these will EASILY BURN if cooked on high, unlike wheat
pancakes. I topped these with more applesauce and they were wonderful!
