The eel (unagi) is served with a sauce that contains soy sauce. I asked about this sauce this past weekend at a sushi restaurant. The chef said that eel comes frozen to the restaurants and is already packaged in the sauce. At the restaurants, more sauced is brushed on. I recently looked for salmon roe (salmon eggs) in an Asian market. I found them in the frozen section and packaged in soy sauce. Don't forget to read labels of things that may seem to be pure. I asked the sushi chef this weekend about the salmon roe in restaurants. He told me that at least at his restaurant the salmon roe contained no sauce at all. I will try to track down the source of this information, but I read somewhere that miso soup that is not clear broth might have ingredients that are not gf. This is not to say that clear broth is necessarily gf. I have never seen clear miso soup in restaurants, so I just don't eat it. Finally, I have also come across seaweed in an Asian market that contained MSG, just in case you don't want to eat MSG. When I am at Japanese restaurants I find it fun and informative to eat at the sushi bar. I like getting to know my chef and asking all these annoying questions!! I find that the chefs enjoy the interaction and the fact that I am so interested!! They never seem bothered. On the contrary...
