I know this is off the topic of gluten, but there was a recent post
on the list about Xanthan gum being made from corn stalks.
 
Since I have problems with corn I went over and looked at my
Xanthan gum  (NOW Foods, Glendale Hts. IL).
 
The label states:
"Xanthan Gum is produced by the pure culture fermentation of the
microorganisim, Xanthomonas camprestris, to yield a type of gel fiber similar
to guar gum.  It is commonly used in thickinging food products.  Xanthan gum
is 100% pure and contains no sugar, salt, starch, yeast, wheat, corn, soy, or
milk"
