All I remember is that it was posted sometime in December. To find that posting, I'd send the following commands in a message to [log in to unmask]: // JOB Database search DD=Rules //Rules DD * SEARCH tortilla IN CELIAC FROM 95/12/01 to 95/12/31 INDEX PRINT /* These seven lines will return every posting containing the word "tortilla" that was sent to the list on or between December first and December 31st. It doesn't matter whether tortilla is in capital letters, small letters, or mixed. All these prior posts are sent back in a single e-mail message. You could replace the word "tortilla" with any word or part of a word that you might wish to find. Of course, you should use a word that does not occur too often; for example "gluten" is probably not a good choice. ;o) In this case you get back the following information. I have a hispanic heritage and my mom made homemade tortillas my whole life and I want my celiac daughter to have the same. So, the following recipe is what I'm using now, but plan to improve the recipe in the next few months. 1.5 cups tapioca flour 1.5 cups potato flour 1 tsp baking powder 1.5 sticks margarine 1/3 cup milk 3 tsp xanthum gum Combine dry ingredients in bowl. Add margarine by hand. Pour milk into to flour mix a small amount at a time. Collect flour with milk into half-fisted balls. Do this until all flour mix is used. May have to add small amount of flour to each ball to make less sticky. Put balls into bowl and cover with cloth. Let stand for 1 to 2 hrs. Roll individuals balls with pastry roller and pastry cloth to roll upon. Heat pan to medium/hot heat. Lift pastry cloth (this should have wood frame to support this movement) and heated pan and flip rolled tortilla into heated pan. Cook until tortilla bubbles and turn over. This is a difficult process and the tortillas are very good when first made but do not freeze very well. I'll let you know if I get a chance to improve this recipe. We use these tortillas for cheese crisps and my children gobble them up. If you want to look through ALL the previous postings, dating back to Nov. '94, you can leave out the "FROM 95/12/01 TO 95/12/31" part. But be prepared: You'll probably get a LOT of postings sent back to you unless the word you search for is very unique. You may want to save this post or print it, so that the next time you want to look up a previous posting you'll have an example of how to do it.
