We've talked to a number of manufacturers, and asked them whether their machines could prepare GF bread, and, if so, which cycle to use. Almost universally, with a few exceptions, the manufacturers have told us that (1) their machines CAN make GF bread, but (2) they haven't tested the machines, themselves. Several manufacturers didn't have a clue about GF bread to the point of asking us if you can use oat or spelt in GF bread. Now, following that rather long preamble, what I would like to ask the list members are: 1. What bread machines are you using. Please be as specific as possible. Please tell me what model number you are using, i.e., Zojirushi S-15, not just Zojirushi. 2. What cycle(s) are you using to make GF bread, and which ones are extraneous? I'm wondering just what degree of programmability is REALLY needed in a bread machine. Do I really need the programming capability of the Zo S-15? Can I get by with a "standard" machine?
