Can anyone tell me why we should not knead gf bread twice?  I have gotten
lazy and I just throw the gf bread mix (from Gluten-Free Pantry --
WONDERFUL!) in on a "regular" (2-knead) setting, and it turns out great!
When I bake it from scratch, I program out the second kneading and rising,
but I don't know why I do it (Red Star Yeast told me to!).
