Blue Cheese and Chilton (Green Cheese) are traditionally started on bread. This reference was obtained from a textbook on cheeses from around the world. These were the only two cheeses that were documented as being from a toxic substance. Others may exist. Production techniques may differs between countries and companies. The companies that CSA/USA contacted may use a different technique or may not consider the level of toxicity to be a factor. I recommend that celiacs avoid all gluten with the realization that some gluten is obtained through normal production cross contamination or inaccuarte reporting. Celiacs have different levels of reactions and blue cheese is a product with a low level of risk but the risks exits and for some celiacs it could have a major impact on their life styles.
