In Canada they allow ALL vinegar including MALT vinegar because of the distilling process. They also allow distilled liquors for the same reasons. I have never had any outward problems with my food so I follow the guidlelines of the CCA (Canadian Celiac Assocation). If in the future they change the rules I will follow the new rules. Much the same as if I lived in England I would be allowed to each items with wheat starch and would do so unless it caused myself and adverse reaction.
