<<Disclaimer: Verify this information before applying it to your situation.>> From: Prodigy Celiac BB Judy Pulling BAKED CHICKEN & ARTICHOKES 4-6 Skinless, boneless chicken breasts- Put in baking dish, sprinkle with salt and pepper COMBINE: 1/4C butter OR 1/4C non-fat yoghurt 1T Lemon juice 1-2 Cloves garlic (chopped) 1t dried or 1T fresh basil 13oz. jar Artichoke hearts (drained and chopped fine) 1\2C fresh GF bread crumbs 1/2C Parmesian or Romano cheese Spread the above mixture on the chicken breasts. Pour over: 1/2C GF chicken broth 1/2C White wine Bake uncovered @375 for 45 mins. Serve with either rice or pasta.
