Eric,

I think the type of finish you are looking for needs to be much more "organic" than what you might be used to. BTY not exposing end grain is a definite plus. I would suggest you learn about oil based finishes. I'm a big fan of linseed oil finish, but it is work to apply correctly and you need to be aware of spontaneous combustion if you leave oil soaked ragged sitting around in cans or Tupperware. 

We just finished applying an oil finish to the quarter sawn old growth Douglas Fir floor we installed in our bedroom and are very happy with it. It called Pro Oil and is made in Germany. It's impregnated with emulsified beeswax so it needs buffed immediately after its applied. It has a low luster and incredible visual depth, and is totally repairable.
