Well, Tom, you're in Japan, so I guess you'd have a good variety of fresh 'mushies' readily
available.  I have the largest I can buy (about 10-15cm diameter) and the oldest fresh mushrooms
raw in my salads - about 3-4 times a week.  I never wash or peel them, just cut them up and toss
them into the salad bowl.  I see scraps of horse manure on them, but no problems yet. These are
about $AU6.00kg here at the moment.  Occasionally I slice them fairly thin and mix them in an
omelette.

For a while I was having raw shiitake mushrooms for variety, but they were four times the price.
Delightful flavour; a real treat.  There are lots of other varieties in our greengrocer's, but most
taste pretty much like the ordinary field mushrooms apart from a few others that simply taste
musty to me.

Nutritionally, mushrooms seem to be of negligible significance, but I assume they are so different
from other foods that the variety will do me good.
