I was trying to find an alternative to use for use with cooking a chicken entree, not a dessert. Thanks to those of you who replied. I appreciate all the suggestions. I think I will try using rice wraps, chebe bread mix, or the new 1-2-3 gluten free biscuit mix. For some items, you could use the 1-2-3 Gluten Free biscuit mix. I wrap the dough around gouda cheese, completely encasing for an appetizer. I also use the dough, cut into thin circles, fill with ready-made pie filling, fold over and seal and deep fry, and sprinkle with confectioner's sugar. It would be great for chicken pot pie/stuffed chicken recipes, and sometimes, I throw a little chopped chives into the dough mixture to make it a little more savory. Happy Thanksgiving. Kim. I saw a pizza crust at the store in Arlington that -- while it might be too thick -- could work for what you're talking about. How about Won Ton sheets? I think there was something about these last year. You could check the archives Last night I was looking at the website (http://www.wheatlessinseattle.com/products.htm) for a GF restaurant in Seattle and the products page features a photo of something that looks like what you're describing. Maybe the owner might be willing to give you a few pointers via email? Rice sheets from the oriental grocery store would probably work. Some are quite salty... Perhaps the Filo Dough pastry recipe in Rebecca Reilly's Gluten-free kitchen book?
