In response to my recent favorable mention of the David Glass Ultimate
Chocolate Truffle Cake, a couple of subscribers voiced mild concern over
whether the cake was actually safe for celiacs. In the past, I'd contacted
the company and been assured that the cake was safe, but figured I'd send a
new email inquiry to be on the safe side.

Here's the disappointing response I got from [log in to unmask]:

"Thank you for recommending our cakes. Our Ultimate Chocolate Truffle
Cake recepe does not call for any gluten ingredient, however we can not
guarantee or advertise it as a 'gluten free' since we are using gluten
in our facility. Therefore, we can not give you any confirmation. If you
have any questions regarding this subject, please call us at
860-769-5570.

At present, I am sorry to say that I have no other details about the degree
of risk that might exist at the facility. Here's what I wrote back to
Michalina:

"Thank you for your prompt response to my inquiry about whether the Ultimate
Chocolate Truffle Cake recipe would be safe for people like myself, who are
on medical gluten-free diets. As someone who has enjoyed (and, in a way,
relied on) the cake for several years, I was disappointed to find that your
company no longer feels confident about its safety, but I am grateful for
your frankness.

"I do hope that you and the decision-makers in your company will seriously
consider the benefits of producing the cake under conditions that would make
it safe for people on gluten-free and wheat-free diets. For most consumers,
the cake--as delicious as it is--is just one of many available in assorted
markets. But for the rapidly growing population of people who must adhere to
those medical diets, the cake would be virtually unique and highly prized. I
strongly suspect that the profit you would make by marketing the cake to
this community would compensate for any investment you would make in
ensuring its safety; on top of that, you'd be making a lot of us very, very
happy.
