Canker sores are also known as apthous ulcers.  They are ulcers induced
by immune reactivity.  I generally see them in my patients opposite
teeth that has some gum recession or gigivitis, though they occur in
other places in the mouth as well.  I advise my patients with apthous
ulcers to get to their dentist and get treated for gigivitis and
periodontitis.

Sucrose, aka table sugar, is a substrate for Streptococcus mutans to
make an adhesive polymer that contributes to dental disease.  I advise
avoidance of sucrose as well until the dental issues get taken care of.
