In answer to my query about rice being "coated" with other substances, this
is the final sumary.

Enriched rice (in the US) is coated with vitamins but not wheat or barley.
But always contact the company to find out for sure.

When you rinse rice, you are rinsing away the excess starch. Many rices are
pre-rinsed and do not have much starch at all, others are heavy with
starch. Rinsing enriched rice washes away the vitamins.

Rice can be made on the same line of production as seasoned/flavoured rice
side dishes. Most of these contain wheat, dairy, soy and or corn products.
Good idea to rinse or not use at all, depending on how sensitive you are.

As to whether or not good cooks rinse their rice before using, some say yes
always, some say never, but many say that sticky/starchy asian rices should
be rinsed first.
