There is no such thing as "case been too big" in this area, you always find yourself in trouble if the case is any smaller. And you will never regrade if you get the right case from beginning (you will regrade if you don't get the right case). You will find that the case you will get is not too big at all, I'd like it to be much bigger as last time I worked with one such beast, I had a bit trouble to fit all things in (not many things, but certainly more than your list). And to answer your other questions: yes, the case is noisy. And I don't recommend you try water cooling. The reason is simple, you will have no warranty, if you don't use the Intel setup (include the Intel noisy heatsink/fan). And if you really want to use water cooled system, you will have to use the one which has external water tank, radiator, and pump, because you will find hardly any room inside to fit them (you could, but highly recommend not to do so).
