Cutting starches will increase definition and lower fat and water weight percentages. I don't see any inadequacies in Paleo diet, assuming a variety of meats and vegetables over time. From my dance (amateur) background, I would think that dancing alone will develop the "right" musculature, with maybe a small amount of added legwork in the gym. Dancers don't seek out upper body strength or mass, and so the leanness that Paleo produces will look great. I think it's great that she's taking such good care of herself! Dancers tend not to be healthy people, usually starving or smoking or dealing with eating disorders, not to mention all the insecurities and mood swings probably brought on by the bad health and overwork.
