<<Disclaimer: Verify this information before applying it to your situation.>> Recently I wrote asking for help with foods that are quick/simple to prepare. I am STILL doing summaries, I had so many responses. However, I've found two foods that work for me. One is VERY simple but not necessarily quick. The other is quick and simple. My friend is a Spanish teacher and has a mother with CD. She suggested I go to a Spanish grocery store and buy something called P.A.N. The package says its "pre-cooked white corn meal." On the package is a recipe for "corn cakes". Elizabeth says that this is a staple in Spain. I just make small cakes, fry them as directed then bake them. All you have to do is add water to the corn meal. I make a batch, freeze them individually then take them to school for my "bread". I haven't tried making them a bit thicker then splitting them apart and using them as a "bun", but Elizabeth assures me that it's great. I like them plain, with a little salt. The ingredients are: precooked white cornmeal, iron, Niacine, Thiamin, Riboflavin and folic acid. Please note: I have NEVER called the company for its gf status. There is a telphone number (not toll free) and an email address on the pkg. Rightly or wrongly, I'm not terribly concerned about cross-contamination (I'm still eating the taco chips at Taco Bell!!!) The second item I use quite a lot is Skyline Chili which I can purchase in the frozen food section of two major grocery store chains. This chili is from Cincinnati (my hometown) and I grew up eating it. It is GF - I called the company and checked. I just heat up the chili, throw it over gf spaghetti and I think it makes a great, filling, QUICK meal. I like grated cheddar cheese on top of mine. Try it.....I think you'll like it. Finally, for those of you who've read my posts in the past, you've heard me extol all the "virtues" of Krogers. Well, I'm at it again. Krogers is now carrying most of the Amy's gf frozen meals along with four or five mixes from the GF Pantry. I went to buy the brownie mix the other day and they were all sold out. Plus their carrying several gf rices from Bob's Red Mill. On top of the fact that they have an 800 number on all of their store brands, their now offering gf items. I'll never move away from a Kroger. BTW, I have no financial interest in the company except for the fact that my son works as a bagger!!!
