Haven't worked with the product, but it is worth noting that yellowing is not the only mode of epoxy failure in direct UV exposure (sunlight). Some will amber, some will chalk, some will crack, some will turn brown or green.
All epoxies are inherently UV-sensitive, though some can be formulated with UV absorbers, high levels of filler, and acrylate modifiers to provide better performance and less drastic or rapid change.
I would not be as concerned about a somewhat flexible epoxy adhesive used in a thin film over a small area of dense stone like granite, where the only likely exposure is at the perimeter glue line. Big volumes would be ill advised.
