Ever since I started eating copious amounts of raw animal fat, unheated.
My Chronic fatigue symptoms and volatile blood sugar vanished.
The raw dairy (grass fed) has also helped me tremendously. I am using it to
transition into health. It is speeding my healing rapidly. Much faster than
if I were excluding it.

It should not be a problem.  The saturated fatty acids that may be
problematic for insulin resistance appear to be palmitic acid and
myristic acid.  These are not that high in coconut oil, I think (but I
should check, I guess).  When glucose is converted to fat in a mammal's
body, it is almost all palmitic acid.
