Does anyone know someone like this (registered dietician that knows the
celiac diet)? I have been looking for awhile now for someone or a team that
can help me with both celiac and diabetes.

I have been gluten free for 14 years and now at age 48 developed Type 1
Diabetes. There is no family history at all of Type 1.
