I,m very happy now to have discovered so many interesting people and news in this list. The point is that in Argentina the celiac condition is but very recently talked about. I found some recipes in the list which seem quite easy and nice for children, but the problem is that almost all of them need a certain Xhantic Gum to paste toghether the different flours and it is not very well known here.
