Glad to hear you have dropped from four sinus infections to two. I, too,
have my own sort of elimination diet. I have a general idea of how much
and when I can cheat. I always get thrown for a loop in the fall and
spring pollen seasons though. Also being allergic to mold and pollens
and living in the south where the pollen counts can be very high, I do
get a stronger reaction at these times. In the spring pollen counts can
be upwards of 2000.

The way it was explained to me was we are all an empty cup. Add a pinch
of allergy to this, 1/4 cup allergy to that , 2/3 cup allergy to another
and pretty soon your cups overflows and you have a reaction. You may not
even know the "pinch of " allergies. But once you have had to much and
you overflow you could trace it to the last known allergen and to much
exposure to it. So in the fall , or mold, ragweed, grasses season here in
the south, they fill my cup quickly. Therefore any additional allergies-
like to much dairy, will overflow me.
