the shell is constitued of a protein . don't remember the name of the
amino
acid that is also in the shell of insects . This amino acid ,i have
been
told by a researcher on insect eating is found mainly if not only in
the
shell of insects and crustaceans.

Once dried whole the shell become very much edible melting in the
mouth .
fresh it is quite chewy and elastic..
