<<Disclaimer: Verify this information before applying it to your situation.>> Thank you all for the great information. Just what I wanted. Before I begin with the summary, I should tell you that I contacted KitchenAid by email and was told that any of their mixers should handle GF flour. They do not offer any procedures for GF flour. 8 -- recommended the heaviest duty 350 watts with a few comments..."purchased last fall, handles anything", "love it, should have bought it 20 yrs. ago", "5 yrs and love it", "had for 20 yrs and love it", "go for the biggest you can afford". "get the biggest and heaviest and an extra mixing bowl". 5 -- recommended the 325 watt with these comments... "no trouble with GF", "works like a breeze", "have not been disappointed with it","makes bread and cookies - prefer over breadmaker". 4 -- 300 watt with these comments..."uses it to make bread - it beats beautifully", "wouldn't go with less", "wishes had gone for more heavy duty as a double batch of dough puts strain on motor", "works great - only complaint, if you are mixing something small, say 2 egg whites, beaters don't quite make it to the bottom of the bowl". 1 -- 250 watt ..."has been used since May 81 and still going strong. Has been used many times for GF bread doughs with no problem". 1 -- which has a lower wattage and has been "more than sufficient for 23 yrs". 1 -- recommended a Vita-Mix mixer blender which can also be used for grinding rice for rice flour. 1 -- has a Sunbean heavy duty stand mixer which she loves. Quite a variety of information, but it seems that one of the heavier machines is the way to go. Thank you all for taking the time to help me. Roseanne in Prescott, AZ
