<<Disclaimer: Verify this information before applying it to your situation.>> I see Tritamyl bread mix is now available at the Gluten Free Mall at celiac.com, and I also saw an article there indicating that wheat starch may be ok for celiacs. My daughter, the only celiac in the family, is ok with the breads we now use, but I don't like having to keep it frozen and she doesn't like the way it gets hard and dry if not eaten immediately after thawing in the microwave. So, I'm ready to try Tritamyl if it stores well and doesn't have to be frozen. Can the folks out there who have tried tell me how well it stores unfrozen, how quickly it gets stales and if it really is as good as they say? Has anyone used to to make pizza, and if so, how was it? I will summarize.
