Banana chips, a favorite of ours is sure another one that we have to be
real careful not to eat too many.  I can down two bananas worth of chips,
when I really only should allow myself an equivalent to half a banana carb
wise else my blood sugars go too high which doesn't help my diabetes.

Making them and rotating the racks around are the worst times to nibble.
Seems if you eat one, then that leads to another and another till the racks
are empty :(

Maybe that's why I got this chain on my foot tied to the chesterfield and
the dehydrator is on the other side of our home :)

But, more seriously, a few banana chips along with some jerky is excellent
to carry along with us when we go bicycle riding, enjoyable and convenient.

If I recall bananas are good sources of fibre and potassium.

We dehydrate relatively green bananas before their starch converts to as
much sugar as ripe bananas -- I'm not sure if that is really true, but a
fresh ripe banana will raise a person's BGs higher than one not so ripe.
