I know there are active Voiceover lists in Spanish because I read a
couple when I was learning the iPhone, but I don't remember them.

There are two sites that may lead you to what you want.

One is a blog though I notice it now is more of a website.
http://www.programaraciegas.net
In the original blog, he covered various topics including Android
(which, of course, he found lacking) and PC screen readers, but his most
beloved topic is Voiceover, and he does a good job with it, especially
with iOS apps. This encarnation of the blog seems to be all iOS, but
I've spent all of five minutes on it.

Another resource is the ONCE Apple page:
http://www.cidat.once.es/home.cfm?id=1101&nivel=2

Neither is quite what you want, but maybe if you explore these resources
or ask there, you can find what you want.
