It probably wouldn't have been more expensive if they had designed the app
with accessibility in mind in the first place.

"First of all: what is work?
Work is of two kinds:
  first, altering the position of matter at or near the earth's surface
relatively to other such matter;
 second, telling other people to do so.
  The first kind is unpleasant and ill paid; the second is pleasant and
highly paid."
From The collection of essays "In Praise of Idleness" by Bertrand Russell

I don't know about the others, but the "How to Cook Everything" is not
accessible. I wrote to the maker of the app, which is not the NYTimes, to
ask that they make the recipes accessible with VoiceOver, and they said it
costs too much for them to do so. Very frustrating and disappointing!
