First, you usually can't send a newly created email unless you logged in to
the mail server (that is, checked your email from that server during that
session).  And newly created emails will use the default server (check
Accounts under the Tools menu to see which is which).

Secondly, when replying, the server used is the one which received the
original message.

Now, keeping the above in mind, select Send Using from the File menu  in
Outlook, then choose the appropiate server.  Hope this helps.
