You can manually do it by creating another .pst (tools -services - add ...)
and then moving the folders or items you want to archive (using drag and
drop or right-click and move...).

Or you can use the archive feature (file - archive...). This allows you to
archive selected folders, optionally only items older than a certain date.
There's also the autoarchive feature which is useful for archiving from
different folders according to different rules on a regular basis. I can't
recall if you have to set up the archive .pst before you can run archiving.
If you want to view the messages in outlook, you'll need to add the archive
store as another personal folders service - this doesn't happen
automatically.
