John,  They sure can!  The easiest way is to highlight the entire document, or the part
you want.  Then, with the cursor over the highlighted portion simply hold the Ctrl key
down and press the [c] key (ctrl+c).  Now go to any other document editor for windows
notepad / wordpad / word / wordperfect open a new document and then hold the Ctrl key down
and press the [v] key. (ctrl+v)

Now you got it,  and you can use all the formatting and editing tools in the editor you
used, plus you can save the new document in with any extension (.txt, .htm) supported by
the editor you  used.
