My employeer traditional relocates "My Documents" to a network drive. See
http://hubpages.com/hub/Windows-7_-_Moving_My_Documents for instructions.
This was the top result when i Googled "Win7 moving my documents".  Other
folders are stored under C:\User\<user name>.  Some of these are just
shortcuts to the real data.  Google each one you want to move for caveats.
