Neil,
I don't believe that any of the on-line trip planners
allow for more than a start and end point, but
commercial software is much more versatile.
Most trip planning programs allow for intermediate stops.
MS Trip Planner uses the term STOP,
AAA uses the term IN-BETWEEN-PLACES
other programs might use the term LAYOVER,
but there will be some way of creating a route that
allows identifying points along the way and/or
alternate routes.
