I've used both, and Eudora is my "real" e-mail client.  Simple and strong.

It will really depend on what you need, though - Outlook can tie into your
calendar and projects, and Eudora can't.

I've helped people with Outlook problems, and found it to be a PITA.  I'm
obviously biased, however, and you should look at both and make up your own
mind.  BTW, those 2 aren't the only ones out there.  Some people use
Pegasus, and Thunderbird (from Mozilla) is getting good reviews.  If you
have Linux, you have even more options.  Good luck!
