The best way I know is to insert a text box, then with the cursor focus
inside the text box, select from the Format menu, Text Direction, and choose
text reading up or down. You can also add text to other inserted objects,
like tables. You can't format normal text within a paragraph so that it
appears vertically, the menu option is greyed out, this has something to do
with Word's use of styles. From my own investigating, it seems that if you
are in an area of a document that is based on a paragraph or outline style
you can only have normal text direction. Tables have their own styles, and
text boxes are considered outside of the paragraph.
