Are you asking how to change the address in Outlook, or Outlook Express? If
so, this can be done in "Tools> Options, then select the tab for "mail
setup" and make the necessary changes there. Other mail applications may be
a bit different, but essentially, the mail account is what you're looking
for.

For what its worth when making changes, I add the new address before
deleting the old one. Why, I'm not sure. Just a habit I guess.
