To setup a Hotmail account in Outlook Express (5.0) for offline viewing, select Tools-Accounts-Add-Mail , and type in the name of your hotmail a/c (e.g [log in to unmask]) and say Next. Follow the setup procedure (type in your password etc) and your a/c will be automatically setup. 

For more explanation on the a/c settings, refer the Hotmail FAQ page on the website.

It doesn't seem to be possible with Hotmail, but it's possible with some other free webmail
services, including Yahoo mail.
