The reason those gridlines aren't showing up is because they don't exist as
actualy lines as far as XL is concerned. For example, if you were to print
the document, you won't see any of them. They exist only as a reference for
the user. Therefore, when you add some sort of shading to an area of
several cells, this "real" feature will be displayed before the "reference"
cell boundaries.

Maybe you could just apply a gridline to the whole sheet? If you click in
the upper left hand box (to the left of A, and above 1) you can select the
whole thing and apply a border format to the whole sheet at once.
